Spicy Carrot pastry

Ingredients:
• Frozen puff pastry (buy ready from the deep freeze), enough to line in a baking tin of 24 cm diameter
• 1 red sweet pepper (paprika)
• 2 big carrots or 250 gram little ones
• 100 gram sweet corn
• 2 soupspoons sunflower oil
• 4 eggs (medium)
• 75 ml (whipped) cream (liquid)
• 200 gram grated cheese (spicy/old)
• baking tin (24 cm diameter)

How to make:
Oven preheated 200° C.
Grease baking tin with butter.
Roll the puff pastry (thawed) on flowered surface until large enough to line the tin. Ease pastry into the tin with an edge on the sides.
Slice the sweet pepper and the carrots in little small blocks.
Heat the oil in frying pan and bake the sweet pepper and the carrots for approximately 5 minutes.
Beat the eggs with salt, cream and cheese (add pepper if needed)
Spread the sweet pepper, carrots and sweet corn over the pastry base and pour combined eggs-cream-cheese mixture over the vegetables.
Put in the middle of the oven for approximately 30 minutes, ready when golden brown.

Tips:

  • you can use all sorts of vegetables you like, only take care that the vegetables do not contain a lot of liquid.
  • To absorb the extra liquid you can sprinkle the pastry with breadcrumbs before you put the vegetables.
  • For extra cheesy taste, you can sprinkle extra grated cheese on top before you put the tin in the oven.



Fish pastry

Ingredients:
• Frozen puff pastry (buy ready from the deep freeze), enough to line in a baking tin of 24 cm diameter
• 175 gram Tuna (canned)
• 5 eggs
• 125 ml crème fraich
• 100 gram grated cheese (cheddar)
• 300 gram assorted fish (shrimps, mussels, crab etc)
• baking tin (24 cm diameter)
• 150 gram of sweet corn and/or pea’s (optional)

How to make:
Oven preheated 220° C.
Grease baking tin with butter.
Roll the puff pastry (thawed) on flowered surface until large enough to line the tin. Ease pastry into the tin with an edge on the sides.
* To absorb the extra liquid you can sprinkle the pastry with breadcrumbs before you put the fish.
Let the tuna drain dry.
Beat the eggs with salt, cream and cheese (add pepper if needed)
Spread the tuna, the assorted fish and if chosen the sweet corn and/ or peas on the puff pastry.
Pour combined eggs-cream-cheese mixture on top of this.
Put in the middle of the oven for approximately 35 minutes, ready when golden brown.
